Description
Les Jamelles Sauvignon Blanc is crafted from grapes sourced across five distinct terroirs in southern France, including the Thau lagoon basin and the Upper Aude Valley. This geographical diversity imparts a balance of freshness, minerality, and roundness to the wine. Harvested in the cool early morning hours, the grapes undergo fermentation in stainless steel tanks at controlled temperatures to preserve their aromatic intensity. Aging on fine lees enhances the wine’s texture, while the absence of malolactic fermentation maintains its vibrant acidity. The wine presents a pale hue and a bouquet of passion fruit, wild strawberry, pink grapefruit, and green tomato, with hints of honeysuckle and flint. On the palate, it is fresh and mineral-driven, offering a lively mouthfeel and a refreshing finish. Serve chilled at 8°C as an aperitif or alongside seafood dishes like ceviche, shrimp and avocado salad, or grilled cod with citrus sauce.
